Cold Brew
OXO Cold Brew
Over the years, I’ve tried several different recipes, but I found that doing the 1:5 brew to 1:3 dilute ratio the best way to do cold brew that works across many different types of beans.
For grind size, you want to go for somewhere around 900 - 1000μm. I currently use 12 on a 078 Timemore.
You can experiment with finer doses if you are using smaller dosage sizes. <100g.
- 100g of coffee
- 500g of water
You can adjust up to 250g/1250g of water. I don’t recommend anything more than 300g of coffee because the drain will start to struggle past 250g.
Once you’ve made the concentrate, it may take up to an hour to drain completely. Then you can 50-75g of concentrate to 150g-225g of water or milk (3x whatever you put in).
Water composition is a huge factor, so experiment with that. I usually just use TWW Cold brew, but it is quite mineral heavy, which leads to the cold brew sometimes having a “same-y” taste when it comes to not as flavor-forward coffees.
One problem with this brewer is that the plastic on the cap is quite prone to capturing scent, and it’s not easy to clean every nook and cranny of it.
Takeya Cold Brew
I’ve tried this brewer several times, but I gave up because cleaning the inner filter is a huge pain in the butt to clean. I only use this for cold brew tea, or a carafe for storing the oxo cold brew.
For tea, I usually do 10g of tea with the full carafe filled up.
Pour Overs
The Classic
Following the Brian Quan v60 recipe, but without the extra agitation. In my experience, the extra agitiation will bring high clarity, but I find with a lot of coffees that it results in a lot of astringency. That has been my experience across many different coffees, but it may vary based on water composition.
15g of coffee
0:00 - 1:00 - 60g of water
1:00 - 1:30 - 100g of water (total 160g)
1:30 - ?? - 100g of water (total 260g)
# if you're using a more medium/darker roast, you should probably stop at around 240-250g instead.
20g of coffee recipe
0:00 - 1:00 - 80g of water
1:00 - 1:40 - 120g of water (total 200g)
1:30 - ?? - 120g of water (total 320g)
UFO Default Recipe
You’d normally just use this for the UFO, but you could try other drippers too.
- 15g of coffee.
- Every 30s pour 50g 3 times.
- Then pour the last 100g.
- Pours should be slow, in wide circles (still not touching the edges).
- The last 50g should be a higher, closer to center pour.
